Blueberry Cobbler


Summer is finally here. I relish the warm weather and the extended days of light. It's been a long time

coming. Summer fruit is bursting with goodness and so it's time to take advantage of those luscious blueberries! This cobbler is literally a no brainer. It's so easy, and comes together in a blueberry minute. As always, it is nut, peanut, egg, dairy, and gluten free friendly.


Cobbler-Dry ingredients

  • *160 grams oat flour (if you don't have a food scale which I highly recommend it's roughly a bit more than 1 2/3 cup-if batter is too thin sprinkle a little more) See notes below for regular flour.

  • 2/3 cup coconut sugar (or 3/4 cup granulated sugar)

  • 2 1/4 tsp. baking powder

  • 1/2 tsp. cinnamon

  • 1/4 tsp. kosher salt

  • 1-2 tsp. granulated sugar for sprinkling on top

Wet Ingredients

  • 1 cup milk of choice (we used So Delicious Coconut)

  • 1 tsp. vanilla

  • 2 TBSP butter or coconut oil-see our notes below

  • 1 pint fresh blueberries

Directions

  • Whisk all the dry ingredients until thoroughly combined.

  • Stir in the milk and the vanilla and mix batter until smooth.

  • In a glass 8x8 or 9x9 baking dish add the two tablespoons of butter or coconut oil and let it melt in a pre heated oven at 350 for about a minute

  • Pour in the batter and smooth

  • Sprinkle blueberries on the top

  • Sprinkle granulated sugar over the batter/blueberries. It helps with that crunchy top.

  • Bake at 350 for 45-60 minutes. (See out notes for results with oat flour)

Notes

Oat Flour-

  • If you need gluten free, oat flour is a great alternative, however please make sure your package says GLUTEN FREE because while Oat Flour is typically gluten free-where and how it is processed is NOT so please double check.

  • If you want regular white flour-then use 1 cup.

  • Oat Flour has a different consistency and is a little denser and the results are different than regular white flour.

  • Our blueberries did not sink as much with oat flour as it did with white flour. Typically they sink to the bottom leaving a crunchy crust and blueberry compote like consistency on bottom. With oat flour it's more cakey but so delicious!
