Having Your Ice Cream Cake and Eating it Too!


People ask me "why" a lot! Why do you post desserts when you're a health coach? The answer is very simple. Dessert is a part of living a balanced life. I have worked with clients to undo the repercussions of a restricted diet. When you deprive yourself of things over and over, unfortunately it comes back with a vengeance. This is why all the recipes on this website reflect a healthy balance...because you can eat healthy and still have a ball. Sometimes, you gotta eat the cake, and for those who suffer with lactose issues, or egg, dairy, or nut allergies, it's nice that you too can enjoy dessert that's safe, tasty, and so easy to make. No baking skills required-I promise. This is a great cake to make for father's day. Move over Carvel, here comes the ice cream sandwich cake-and quite honestly, I think it's way better!


Ingredients

1 cup chocolate chips (we used Enjoy Life minis)

2 tsp. coconut oil

9 So Delicious Ice Cream Sandwiches (you can use any sandwich of your choice-these sandwiches were smaller than your average ice cream sandwich)


Directions

  • Microwave chocolate chips and coconut oil in 30 second increments-stirring each time until smooth and creamy.

  • Drizzle a spoonful of chocolate across a plate. This will act as the "glue" to prevent the sandwiches from moving.

Line up three sandwiches on the chocolate.

Spoon more chocolate drizzle over the sandwiches and place next three sandwiches on top.

Repeat one more time.

Drizzle chocolate all over the top and down the sides.

Sprinkle toppings of your choice while chocolate is wet-sprinkles, colored sugar, crushed graham crackers. Go wild.

Place in freezer until ready to serve.
