Move Over Dominoes-Here Comes "Mominoes!"

We took a poll on Instagram-What types of meals are you looking for? The answer was a resounding-easy weeknight meals! Well, we got you. This pizza recipe is probably the simplest of the lot. No rise time, minimal ingredients, you can make it vegan veggie, or not- and it's egg, dairy, soy, nut friendly.

Ingredients

2.5-3 cups of unbleached white flour

1 packet yeast (2 1/4 tsp)

1 tsp. sugar

1 cup warm water (between 110-115 degrees)

2 TBSP olive oil

1 tsp. salt

1 TBSP corn meal (optional)

3/4 tomato sauce

4 oz. cheese (we used shredded white sharp cheddar-you pick yours)

1/4 cup shredded parmesan cheese (we shredded it ourselves)

Options

Roasted broccoli ( or any veggie of your choice)

Caramelized onions

Directions

  • Preheat oven to 450

  • Place yeast and sugar in a large bowl

  • Heat water for one minute in microwave

  • Pour water over sugar and yeast and wait until it becomes creamy and bubbly

  • Whisk ingredients together after yeast has bloomed

  • Add salt, and oil and whisk

  • Start adding flour one cup at a time. You may need more than 21/2 cups if dough is sticky-don't worry this dough is very forgiving.

  • Dough will start getting difficult to stir-use hands and knead until bread is smooth and pliable.

  • Roll dough out into a square (we used a 15x11 sheet pan) You don't have to roll it out to that size as you can press/stretch a lot of it in the pan. Watch our video on how to do this.

  • Make sure dough is even across the pan

  • Poke holes with a fork all across the dough.

  • Pre bake for 10 minutes

  • Prepare sauce and cheese

  • We pre roasted broccoli -approximately 2 cups-put it on a sheet pan with some olive oil and salt and roasted for 30-35 minutes on 425.

  • Caramelized onions-we sliced a large onion, placed in pan with olive oil and salt and sauteed onions until soft and dark brown (about 15 minutes)-totally well worth the effort.

  • Let crust cool for 5 minutes and then spread the sauce evenly.

  • Strategically place veggies/onion onto the crust (at this point you could bake your pizza without the cheese if you are vegan or dairy allergic)

  • Sprinkle cheese evenly across the entire pan

  • Bake for 10 minutes or until cheese is bubbly and crust is golden brown.

  • Enjoy
