Sorry folks, I was a bit behind on the blog and was completely excited and overwhelmed when so many of you were asking for this recipe on Facebook. I truly thought it was here already, so mea culpa, I hope you love this bread as much as we do!! Let me know how it goes. It's perfect for any holiday dinner table.
PS-This bread is vegan-no dairy, no honey, no egg and it is also nut and peanut free.
Ingredients
2 cups unbleached flour (if you want to make this gluten free you can use GLUTEN FREE OAT FLOUR-2 1/3 cup oat flour) Please make sure your oat flour states Gluten Free on the package as some oat flours are NOT Gluten Free!
Fake Egg
2/3 coconut milk- I used So Delicious (or milk of your choice)
2 tsp. apple cider vinegar (whisk milk and vinegar to get thick and foamy and let it sit while you assemble the rest of the recipe)
Dry Ingredients
1tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp salt
1/4 tsp. ginger
1/4 tsp. nutmeg
1 TBSP. golden ground flaxseed
1/2 cup mini chocolate chipd ( I love Enjoy Life)
Wet Ingredients
1 cup +1 TBSP Pumpkin puree-not pumpkin pie filling
1/4 cup canola oil
1/2 cup maple syrup
2 tsp. vanilla extract
1/2 tsp. maple extract
2 tsp. apple cider vinegar
Fold in 1/2 cup choco chips
preheated 375 40-50 minutes
Directions
Preheat oven to 375
Combine your fake egg ingredients-whisk until foamy and set aside to let thicken
Combine all the dry ingredients and whisk until thoroughly combined.
Combine all the wet ingredients (including your fake egg) in a separate bowl and whisk until uniform in color.
Add dry ingredients slowly to the wet ingredients and mix until batter is formed. It will be a bit thick.
Fold in the chocolate chips.
Grease and lightly flour a loaf pan so the bread doesn't stick.
Add the batter to the pan and smooth the batter corner to corner and all around the pan.
Bake for 40-50 minutes.
Let cool completely.
