Salad for Your Basket





Ah... Spring is finally here in all its glory. The buds are bursting, the air is warmer, and before the cicadas make their historic appearance (after all they have been waiting underground for 17 years), it's a great time for a picnic. Of course, you can make this recipe anytime as it's bursting with beautiful jewel toned produce that works for any lunch or dinner meal. All the ingredients are easy to find and prepare. So, grab yourself a basket and make this salad, you're gonna love it!








Spinach Blueberry Salad with Honey Balsamic Dressing


INGREDIENTS

Salad

  • 3-4 cups fresh baby spinach roughly chopped

  • 1/2 cup toasted pumpkin seeds ( I toasted them in the toaster oven)

  • 1/2 cup dried cranberries I like the low/no sugar type!

  • 1/2 cup feta cheese

  • 1/2 cup fresh blueberries

Honey Balsamic Dressing

  • 1 tbsp olive oil

  • 1 tbsp water

  • 2 tbsp honey

  • 2 tbsp balsamic vinegar

  • If too sweet-you can cut the sweetness with a squeeze or two of lemon.

INSTRUCTIONS

Toss all salad ingredients together.

Make the dressing: Add all dressing ingredients to a mason jar and, with the lid on TIGHT, shake well.
